the one with leftover eggnog

My dear husband does this every year.  He gets overly excited about eggnog and buys two cartons the first time he sees them at the store you know, in case they run out.  Then he drinks one mug at some point over Christmas.  So what to do with 1.75 cartons of eggnog?  Make Eggnog French Toast and Eggnog Ice Cream!  Both are ridiculously easy and delicious.

Eggnog French Toast: Simply pour some eggnog in a bowl and submerge slices of bread in the nog.  Challah bread is the absolute best for thick slices of french toast.  Melt some butter in a skillet, place the bread and toast over medium-high heat for a few minutes on each side.  Top with syrup and/or powdered sugar.  Yum.

Eggnog Ice Cream:  You will laugh at how easy this is.  Did you get an ice cream machine as a wedding gift?  Get it out and freeze the bowl according to directions.  We have a Cuisinart that is super easy to use.  When it is ready, just pour the eggnog in straight out of the carton.  Add a tablespoon of rum if you want. Turn on the machine and in 20 minutes, you will have delicious eggnog ice cream!

Any other ideas for leftover eggnog?  I still have another carton in my fridge...
